By Selina Altomonte
If you’ve spent a lifetime enjoying toast for breakfast, and your idea of a perfect breakfast or brunch involves pancakes or a bacon and egg roll, going gluten-free might have you scrambling for what to eat to kickstart your day.
With a little bit of planning (and learning how to bake your own), you can have brilliant gluten-free breakfasts ready to go, plus some weekend specials up your sleeve too.
POWER SMOOTHIE
Elevate your morning smoothie with antioxidant-rich berries and super ingredients such as cinnamon, turmeric and even a scoop of collagen or protein powder. To sneak in some good fats, add a drizzle of MCT oil or a spoonful of coconut or peanut butter: trust us on this.
BANANA BREAD
If you’ve been missing your coffee and banana bread combo at your favourite café, it’s time to BYO: Bake Your Own. It’s a great way to use up overripe bananas to prevent food waste, and baking up a batch so you have some ready to go in the freezer ensures you’re never caught out without a good breakfast.
BUCKWHEAT PORRIDGE
If you’re missing traditional oatmeal as your cold-weather breakfast, buckwheat porridge is just as comforting, and rich in protein. Add an antioxidant boost with your favourite fresh berries, or sprinkle over toasted almond flakes or coconut.
SAVOURY GLUTEN-FREE MUFFINS
Load your muffins with finely grated carrot, zucchini, sundried tomatoes and cheese for a satisfying breakfast or lunchbox treat. They’re even better when warmed up.
EASY GLUTEN-FREE BREAD
Sometimes you just want a piece of toast. We get it. Learn to bake your own gluten-free bread and you’ll never go back. We’ve got a recipe that doesn’t need rising time guarantees fresh bread from scratch, in under hour. Give it a try.
CHILLI BEANS BREAKFAST
A weekend special: saute onion, garlic, kidney beans and chopped green and red capsicum, and spike it with smoked paprika or chilli. Serve with a poached egg and avocado on the side, and dig in with chunks of your freshly baked gluten-free bread.
RICOTTA PANCAKES
Bring back pancake day, we say. Serve up a stack of perfectly fluffy ricotta pancakes for a special weekend brunch, best enjoyed after a sleep-in. The secret to a great pancake? Make sure your pan is thoroughly heated, with a good knob of melted butter to crisp up the edges.
