GLUTEN-FREE BANANA BREAD

MAKES 1 LARGE LOAF (APPROX 14 SLICES)

Ingredients

  • Eggs

    2

  • Medium, very ripe bananas

    3

  • Caster sugar

    ⅔ cup

  • Canola oil

    ⅓ cup

  • Gluten-free flour mix

    1¾ cups

  • Xanthan gum

    1 tsp

  • Gluten-free baking powder

    2 tsp

  • Bicarb soda

    ¼ tsp

  • Salt

    ½ tsp

  • Walnuts, chopped and toasted

    ½ cup

Method

STEP 1

Preheat oven to 180°C. Grease a loaf tin.

STEP 2

In a medium mixing bowl, beat eggs until frothy. Using a fork, mash bananas on a plate and add to eggs, mix well. Add sugar and oil and beat until well mixed. Add flour mix, xanthan gum, baking powder, bicarb soda and salt to banana mixture. Stir in nuts and mix until well blended.

STEP 3

Pour into prepared tin and bake in preheated oven for 45-55 minutes, or until a skewer inserted in the centre comes out clean.

STEP 4

Remove from oven and cool in the tin for 10 minutes before turning out and cooling completely. To serve, slice generously thick and toast, if desired. Store well-wrapped in the refrigerator.
