MUSHROOMS WITH RICE NOODLES
A super quick gluten-free vegetarian recipe you can whip up on a weeknight. Start with a nourishing mix of mushrooms.

Ingredients

Rice stick noodles
200g

Broccolini
1 bunch

Vegetable oil
2 tsp

Green shallots, ends trimmed, diagonally cut into 8cm lengths

Gluten-free hoi sin sauce
80ml

Oyster mushrooms
150g

Shiitake mushrooms, halved
100g

Enoki or shimeji mushrooms

Method
STEP 1
Follow directions on packet to cook rice noodles. Drain. Return to pan and cover.
STEP 2
Remove florets from broccolini. Slice the stalks lengthways into thin strips. Heat oil in a wok over medium-high heat, add broccolini florets and stalks and stir-fry for 3 minutes, or until tender but still firm.
STEP 3
Add shallots and stir-fry for 2 minutes. Add hoi sin sauce, and oyster and shiitake mushrooms. Stir-fry for 2-3 minutes. Add enoki mushrooms and stir-fry for 1 minute.
STEP 4
Divide noodles among bowls. Top with mushroom stir-fry and serve immediately.
