PIZZA SCROLLS

Our simple pizza scrolls are the perfect kid-friendly snack: they’re a great gluten-free lunchbox idea and are a hit at parties too.

Ingredients

  • 300g gluten-free self-raising flour

  • 1 tsp xanthan gum

  • 1 tsp yeast

  • 100ml lukewarm water

  • 60ml vegetable oil

  • 2 eggs

  • Desired toppings (see tips)

Method

STEP 1

Preheat oven to 50°C (or the lowest temperature on your oven).

STEP 2

Sift flour and xanthan gum into the bowl of an electric mixer. Add yeast, water, vegetable oil and eggs. Mix on low speed for 1-2 minutes, until well combined.

STEP 3

Turn oven off and open door to release heat (if the oven is too hot or too cold, the dough won’t rise). Put a shallow dish on the floor of the oven and fill with boiling water. Place mixing bowl in oven, close door and leave to rise for 30 minutes.

STEP 4

Turn dough out onto a surface dusted with gluten-free flour and pat out to 1cm thickness. Preheat oven to 180°C.

STEP 5

Spread dough with desired toppings and roll (you may want to use a spatula to help lift it from the bench to roll). Cut into 2.5cm thick slices and bake on greased baking tray (or pizza stone) for 12-15 minutes, or until golden brown.

Try these combinations to fill your pizza scrolls:

  • Cheese, ham and pineapple
  • Sweet chilli and cheese
  • Gluten-free Vegemite and cheese

    It might be useful to update Vegemite to GF vegemite in the tips section, particularly for those cooking for GF friends and do not know gluten content of products well
