These baked chicken nuggets are one of our fave gluten-free recipes for kids. We think they're perfect for parties!
Rice crumbs or gluten-free breadcrumbs
Gluten-free plain flour
Chicken breast, cut into bite-size pieces
Preheat oven to 200ºC. Grease a baking tray with oil.
Place the cornflakes in a food processor and process into fine crumbs, then mix with the rice crumbs or gluten-free breadcrumbs. Spread over a non-stick baking tray or a sheet of baking paper.
Place flour in a bowl and season with salt and pepper. In a separate bowl, whisk egg whites together with a fork until just a little foamy.
Toss chicken pieces in the seasoned flour, then dip in egg white and roll in the crumbs until completely coated. Place nuggets on prepared tray and bake in preheated oven for 10-15 minutes, until crisp and cooked through.
