MIXED BEAN AND MARINATED TOFU WRAPS
This high-protein, gluten-free vegetarian recipe uses a bounty of beans, tofu and fresh herbs for a delicious wrap.

1½ tbs white miso paste

1½ tbs nutritional yeast

1½ tbs apple cider vinegar

½ tsp oregano
-
½ tsp dried mint
-
2 tbs water
-
2 tbs extra virgin olive oil

Juice of half a lemon

280g extra-firm tofu, drained and moisture squeezed out
Marinated tofu
-
200g tinned chickpeas, drained
-
200g tinned kidney beans, drained
-
200g tinned black beans, drained
-
Handful flat-leaf parsley, chopped
-
Small bunch dill, roughly chopped
-
1 clove garlic, grated
-
2 tbs extra virgin olive oil
-
2 tbs apple cider vinegar
-
2 ripe avocados
-
Juice of half a lime
-
1 tbs coriander, roughly chopped
-
1 tsp extra virgin olive oil
-
1 packet BFree Low Carb High Protein Wraps

Salad leaves of choice

To serve
Method
STEP 1
Place all the ingredients for the marinated tofu except the tofu in a jar and shake vigorously until combined.
STEP 2
Cut the tofu into roughly 2cm cubes and add them to the marinade, shake gently to combine and set aside.
STEP 3
In a bowl combine all the ingredients for the mixed beans and stir to combine. Taste for seasoning and set aside.
STEP 4
Blitz the avocado cream ingredients with a handheld food processor or blender, or mash with a fork until smooth. Check for seasoning and set aside.
STEP 5
When you’re ready to serve, spread the wraps with the avocado cream and top with marinated tofu, mixed beans
and salad leaves. Leftover marinated tofu and beans will keep well to use in salads and more wraps over the week.
