CAJUN SALMON TACOS

Taco night gets a delicious upgrade with Cajun-spiced salmon, fresh salsa and BFree Wholegrain Wraps.

Vibrant flavours: Cajun salmon tacos made with BFree gluten-free wholegrain wraps

Ingredients

    For the Cajun salmon

  • 4 salmon fillets

  • Juice of 1 lime

  • 1 tbs smoked paprika

  • 2 tsp ground cumin

  • 1 tbs olive oil

    Salsa

  • 3 avocados, diced

  • 2 x 150g tins sweetcorn

  • 100g cherry tomatoes, quartered

  • Juice of 1 lime

  • 2 tbs coriander, chopped

  • 1 tsp olive oil

  • To serve

  • 2 packets BFree Wholegrain Wraps

  • ¼ red cabbage, shredded

  • Lime wedges

  • Sour cream

  • Sliced jalapeños

  • 100g crumbled feta cheese

  • Coriander leaves

Method

STEP 1

Pre-heat the oven to 200°C fan-forced. 

STEP 2

Place the salmon on a baking-paper-lined tray and squeeze over the lime. Sprinkle with paprika, cumin, salt and pepper, and drizzle with oil. Rub the seasoning onto the salmon fillets. 

STEP 3

Cook salmon in the oven for about 15 minutes, until just cooked through and darkened on top. 

STEP 4

Meanwhile, combine salsa ingredients. 

STEP 5

Prep toppings and warm your wraps, either in a hot dry pan to blacken a little, in the microwave, or in foil in the oven. 

STEP 6

When salmon is cooked, chop roughly and serve alongside toppings in bowls for everyone to build their own tacos.
