PUOPOLO ARTISAN SALUMI PENNE CACCIATORE WITH ROMA TOMATOES
Whip up this traditional pasta dish for an easy and delicious midweek meal.

Ingredients

Rock salt

400g gluten-free penne
-
Olive oil
-
180g Puopolo Cacciatore Hot Salami (can be substituted for Puopolo Cacciatore Mild Salami if preferred)

150g Roma tomatoes, halved
-
150g bocconcini, halved
-
Parmesan cheese, grated, to serve

Fresh basil, to serve
Method
STEP 1
Fill a large pot with water and bring it to the boil, then add 1-2 small handfuls of rock salt.
STEP 2
Add the penne and cook for 11-12 minutes or as recommended on the package.
STEP 3
While the water is boiling, cut the Puopolo Cacciatore Salami in 0.5cm thick slices then cut into smaller strips.
STEP 4
Heat a drizzle of oil in a pan. Add the Puopolo Cacciatore Salami to the oil and cook at low heat for 7-8 minutes or until fat has become transparent and meat has become crunchy.
STEP 5
Add the Roma tomatoes and cook for 3-5 minutes or until they have softened.
STEP 6
Turn the heat off and add the bocconcini to the sauce, then add the penne (make sure it is still warm) and mix through.
STEP 7
Serve with a sprinkle of Parmesan and fresh basil leaves on top.
