CHOCOLATE COCONUT CUSTARD SLICE
Who can resist a classic slice? This version with chocolate, coconut and custard is a great do-ahead dessert.
Ingredients

115g butter

¼ cup sugar

¼ cup pure cocoa powder

1 egg
-
1 tsp vanilla

1½ cups gluten-free biscuit crumbs

1 cup shredded coconut

65g walnuts, chopped

75g butter, at room temperature

2 tbsp gluten-free custard powder
-
60ml milk
-
2 cups gluten-free icing sugar

250g chocolate melts
-
2 tbsp butter

Method
STEP 1
To make base, grease a 20cm square pan. Melt butter in a saucepan. Stir in sugar and cocoa powder until smooth. Whisk in egg and vanilla then remove from heat. Stir in biscuit crumbs, coconut and walnuts. Press into the prepared pan and chill in fridge for 20 minutes.
STEP 2
To make the filling, cream butter then beat in custard powder and milk. Slowly beat in icing sugar. Spread over base layer and chill in fridge until set.
STEP 3
Melt the chocolate and butter in a small saucepan and stir until smooth. Spread over filling layer and chill in fridge until the chocolate begins to harden. Score the chocolate into bars and return to the fridge. Before the chocolate hardens completely cut into bars (use a hot knife and wipe clean after each cut).
